Celebrate the Flavors of Plum Spring Salad with Balsamic Vinaigrette

Spring brings about bountiful produce, and with the weather warming up, there is nothing more satisfying then a refreshing and hearty salad. This week we bring you a delightful Plum Spring Salad with a Balsamic Vinaigrette full of wonderful sweet, tart and herb flavors.

What you will need:
  • Leafy greens of your choice (romaine, arugula, spinach, etc.)
  • 1 or 2 black plums
  • Sliced almonds
  • Feta cheese
  • ¼ cup of olive oil
  • 1 ½ tablespoons of balsamic vinegar 
  • ½ tablespoon of Dijon mustard
  • 1 teaspoon of honey
  • Salt and pepper
  • 1 lemon for lemon zest (optional)
If you want to serve your salad fresh, start by Plum Spring Salad Step 1making the vinaigrette ahead of time. Mix the olive oil, balsamic vinegar, Dijon mustard and honey in a small bowl. Season it will salt and pepper to your liking.
 
Whisk the dressing mixture thoroughly. If the vinaigrette is too thick for your liking, add a small amount of water to thin it out.
 
Now it is time to assemble the salad! Take whatever leafy greens you prefer (we used a Plum Spring Salad Step 2baby spring mix), one or two thinly sliced plums, a handful of sliced almonds and a sprinkle of feta cheese, and throw them in a salad bowl. 
 
Lastly, drizzle the salad with the balsamic vinaigrette and toss it all together. To top it off, add some lemon zest to brighten all the flavors. Pair it with a delicious entrée, and you have the perfect spring meal on your hands!
