Meet the Perfect Summer Salad - Chills & Fever Salad

Chills and Fever Salad VegetablesIf you love cucumbers and tomatoes, Chills and Fever Salad should be right up your alley.  Our Texas Pure’s Sherrian Jones wows us again with a great summer salad perfect for the family barbecue.  


Salad Base:
  • 3 medium cucumbers washed, peeled (or sides scored with a fork) and sliced thin
  • 3 medium-to-large tomatoes washed and sliced into wedges (or halved cherry tomatoes)
  • 1 medium onion sliced thin and separated into rings

Marinade:
Chills and  Fever Salad Marinade Seasonings
  •  ½ cup vinegar - distilled, white wine or your favorite vinegar (Sherrian uses distilled)
  • ¼ cup sugar
  • 2 teaspoons salt (Sherrian prefers garlic salt) 
  • 1 teaspoon coarse ground black pepper 
  • ½ cup of water 
  • ¼ cup olive oil (or any vegetable oil)
  • Optional: 1 teaspoon of chopped fresh mint

Combine all these ingredients and mix well.
Chills and  Fever Salad Refrigerated
Cover and refrigerate at least 2 hours or overnight. It gets even better after a day or two. Add little mozzarella balls (small ones) into this salad and it is yummy too. 

The marinade is wonderful, so do not fail to have some with this salad. It might even be fun to try on a variety of different salads.

Why this is called Chills and Fever, we do not know. There are many variations of this recipe. Sherrian’s family calls it this because the onions are spicy (hot-fever), and cucumbers and tomatoes are cool (chills)!
