Bring Your Fall Harvest Together with Broccoli Cauliflower Salad

Broccoli Cauliflower Salad close upLooking for a refreshing side or main dish? Consider Broccoli Cauliflower Salad.

Broccoli can be grown from seed in the fall but transplants are a preferred option when available. It does better in soils with a pH range of 6.0 to 7.5 with good drainage. You can raise your pH by adding lime. Broccoli needs moist, fertile soil which is something our Texas Pure Products Compost can add. Late summer or early fall are the best times for planting. Be sure to apply a thick layer of mulch to help retain moisture. Start to harvest when the heads reach 6-8 inches wide but are still tight. Don’t let it flower.

Now you are ready to make Sherrian’s tasty Broccoli Cauliflower Salad.

Ingredients What you will need:
  • 1 head of Cauliflower chopped
  • An equal amount of Broccoli Chopped
  • ¾ cup red onion chopped
  • ½ cup toasted sunflower seeds
  • ½ cup sugar
  • 1 cup raisins
  • 2 Tablespoons Red Wine Vinegar (Sherry Vinegar is our favorite)
  • 1 cup Mayo or Miracle Whip (if it is too dry add more)
  • 1 cup shredded sharp cheddar cheese (add to taste)Mix ingredients
  • Bacon Bits (add to taste but approximately ½ cup)
Chop cauliflower, broccoli, onion and add rest of ingredients. Stir well and refrigerate. Salad make a nice little sauce as it sits in fridge.

It is just as good without the bacon bits (our version here) so if you just want a veggie salad it is really good.

Happy eating!
