Enjoy a Slice of Sherrian’s Best Pumpkin Bread

Bring this treat to the Thanksgiving holiday gathering and you'll be the talk of the table. Special thanks to Sherrian Jones of Texas Pure Products who happily shares her family’s famous pumpkin bread recipe.

To make Sherrian’s Best Pumpkin Bread you will need:
  • 3 eggs
  • 1 ½ cups of sugar
  • 1 cup 2 Tablespoons of vegetable oil (or coconut oil, grapeseed oil, etc. – not olive oil)
  • 1 ½ cups of pumpkin
  • 1 ½ teaspoons of vanilla
  • 1 ½ teaspoons of baking soda
  • 1 ½ teaspoons of baking powder
  • 1 teaspoon of salt
  • 1 ½ teaspoons of cinnamon
  • ¼ teaspoon of cloves
  • ¼ teaspoon of ginger
  • ¼ teaspoon of nutmeg
  • 2 ¼ cups of all-purpose flour
Once you have all your ingredients, preheat your oven to 325 degrees and set the rack in the lowest position. Mix together all the ingredients except the flour. 

Bread Step 1

After the ingredients are thoroughly mixed, add flour one cup at a time until fully incorporated into the pumpkin mixture.

After the pumpkin mixture and flour is completely mixed, spray non-stick cooking spray into two loaf pans. Pour the batter equally into the two loaf pans and place them in the 325-degree oven for 45 minutes to 1 hour.

After 45 minutes, check the consistency of the bread by sticking a spaghetti straw into the center of the loaf.  If it comes out clean the bread is ready. If dough covers the spaghetti straw, cook the loaves an additional 15 minutes, checking again with the straw. Once the straw come out clean, take the loaves (still in their pans) out of the oven to cool.

When the loaves have cooled, you can pop them out of their pans, slice them and eat them as is or with whipped cream. Or, you can top it off with a cream cheese frosting that is to die for!

To make the Cream Cheese Frosting you will need:
  • ½ cup (1 stick) of butter softened
  • 8 ounces of cream cheese softened
  • 4 cups of powdered sugar
  • 2 teaspoons of vanilla
*You can half this recipe if needed, but it keeps great in the fridge for practically forever.

Beat the softened butter, cream cheese, and vanilla together. Then, you want to mix in powdered sugar slowly. 
Frosting Step 1

You can add milk to thin it to your desired consistency, but ideally it should be neither too thick nor too thin. If you accidently make it too thin, just add more powdered sugar.

After it is mixed, put the frosting in a zip-top bag with a corner cut off (the smaller the corner cut on the bag, the thinner the piping will be). Pipe the frosting onto the top of your cake in a crisscross fashion. It should lacy and dip off the edges.

When finished, slice and share with all your guests to enjoy!
