You don’t have to be Irish to enjoy these tasty

Fingerling Potatoes. As Ryan has carefully illustrated, these potatoes pair well with steak and other vegetables. Best of all this is one of our simplest recipes yet.
Before you fire up the stove, gather these ingredients for Ryan’s Fingerling Potatoes:
- 2 pounds of fingerling potatoes
- 1/2 of a white or yellow onion – diced
- 1 Tablespoon of dried dill (or 1.5 Tablespoons of fresh dill)
- 2 Tablespoons of extra virgin olive oil
- 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper

Wash and dry the potatoes first. In a large stock pot, add the olive oil, potatoes, salt, pepper
and onions. Swirl the pot until all items are coated with oil. Cook COVERED on medium heat for approximately 45 minutes or until fork tender. Without removing the lid, swirl pan every 10-15 minutes to mix during the cooking time. After 30 minutes of cooking time, add the dill and swirl pot to evenly coat the potatoes. This recipe serves eight people.
